Avocado Lime Mayonnaise
- 1/4 avocado, deseeded
- 1 tablespoon (60 ml) lime juice
- 1/2 teaspoon (5ml) grated zest of one lime
- 1/3 cup (200ml) Basic Mayonnaise
- 1 tablespoon (15 ml) jalapeño, deseeded and diced
- salt to taste
Cut and deseed the avocado. Scoop out the flesh into a bowl. Add the lime juice and zest, mayonnaise, diced jalapeño, and mix well. Salt to taste. This method will provide a chunky version of the mayonnaise. For a smoother version, blend the mix in a blender until it reaches your desired consistency. For a spicier version retain more of the jalapeño seeds and add until desired. Makes 10 servings of 1 tablespoon (15 ml). Enjoy!
