Broccoli with Savory Garlic Dressing


  • 4 ounces (113.3 g) broccoli spears
  • 2 tablespoon (27 g/ 30 ml) olive oil
  • 1 teaspoon (3g/ 5 ml)garlic
  • 2.5 (10 g/ 10ml) anchovies in oil, drained
  • 1 1/2 tablespoons (12.9g/ 22 ml) capers, drained
  • 1 tablespoons (15.4g/ 15 ml) lime juice
  • white pepper to taste


Dressing. Blend all ingredients together. Season with white pepper, and blend again.

Broccoli. For fresh broccoli, wash and trim the broccoli into bite/ serving sized pieces.

Stove Top: Cook the broccoli covered with water in a saucepan over med/high heat. You can also put in a steamer basket, add water, making sure the water stays below the basket. Cook with the lid on until to preferred tenderness, about 3-5 minutes. Place in a bowl, and add one tablespoon (15 ml) dressing per serving of broccoli, and white pepper to taste while warm.

Microwave: Cook broccoli in the microwave in a microwave safe bowl with 1/4 cup (59 ml) water with a lid covering most but not all of the bowl. Cook about 3-5 minutes, depending on the voltage of your microwave. Add one tablespoon (15 ml) dressing per serving of broccoli and white pepper and stir well.

Pressure Cooker: Place broccoli in the pressure cooker, along with the required amount of water for your unit (mine is 1/2 cup (118 ml). Close and lock your lid. Cook on high for 2 minutes. Release the pressure safely from your pressure cooker. Safely open your lid. Add one tablespoon (15 ml) dressing per serving of broccoli and white pepper to taste. Enjoy!

You will have extra dressing leftover.

Base recipe makes 2 servings of 2.5oz/ 70.4 g (2 oz/ 56.6g broccoli and .5/13.7g oz dressing) a piece.
