Cauliflower Rice


  • 1 medium head cauliflower
  • salt to taste
  • pepper to taste


Take one head of cauliflower, trim away all leaves and one inch (2.54 cm) of the bottom of the stem. Remove any dark spots, and tear into smaller florets that will better fit into your food processor. Process the raw cauliflower until it is roughly the texture/size of rice. Be sure to take pauses during processing, to stir the cauliflower and make sure that all florets get processed. Place all the raw cauliflower rice into a large microwave safe bowl and microwave for 5 minutes. Let cool. Salt and pepper to taste. A medium head of cauliflower will make 4 cups (1 liter) of cooked cauliflower rice, making 8- half cup (118 ml) servings.
