Chorizo Stir Fry
- 4.6 ounces (130.4 g) Homemade Chorizo (2 servings), or store-bought
- 1 cup (225 ml) Cauliflower Rice (2 servings)
- 1 medium zucchini (courgette), sliced
- 1 teaspoon (5 ml) coconut oil
- salt to taste
- pepper to taste
Prepare chorizo and cauliflower rice according to their recipes. Wash and slice the zucchini/ courgette, and cook in the coconut oil over medium-high heat until just soft, about 3-5 minutes. Add the chorizo and cauliflower rice, mixing well. Salt and pepper to taste. Serve. Buen provecho!
