Garlic Zucchini/ Courgette Boats


  • 1 medium zucchini/ courgette
  • 1 teaspoon (5 ml) garlic, minced
  • 1 teaspoon (5 ml) olive oil
  • salt to taste
  • pepper to taste


Preheat oven to 400F/ 204 C/ Gas Mark 6. Wash and trim the zucchini/courgette. Cut it in half length wise. Place on a parchment lined baking sheet. Brush half the garlic on each half of zucchini/ courgette. Brush half of the olive oil on each half. Season with salt and pepper too taste. Bake for 10-15 minutes. Enjoy!

Basic recipe serves two with half a zucchini a piece.
