Low Carb Horchata

Ingredients

  • 2 cups (500 ml) unsweetened almond milk
  • 1 tablespoon (15 ml) blanched almond flour
  • 1 teaspoon (5 ml) instant espresso powder
  • 1/2 teaspoon (2 ml) ground cinnamon
  • 1/4 teaspoon vanilla extract
  • ice cubes to preference
  • liquid stevia to preference

Directions

Add all the ingredients to a blender except the liquid stevia. Blend well, add the liquid stevia to taste. Mix well. Buen provecho!

Base recipe yields 2 servings of (9 oz/ 264 g) a piece.

Horchata is a refreshing chilled Mexican drink typically made with water, rice and almonds. We've followed the general idea using almond milk, but have taken a few liberties to make it our own- and to make it low carb. Adding a shot of rum makes this an amazing party or by the pool drink!
