Raw Zucchini (Courgette) Salad
- 1 zucchini/ courgette, washed and trimmed
- 1 tablespoon (15 ml) olive oil
- 1 tablespoon (15 ml) apple cider vinegar
- salt to taste
Wash and trim the zucchini/ courgette. Using a mandolin, slice the zucchini/ courgette along a full side, making long and thin strips of raw zucchini/ courgette. Slice the entire zucchini/ courgette and place the strips in a bowl. Add the olive oil and vinegar, and toss well to coat. Add salt to taste. Enjoy immediately for best results!
